Best Carrot Cake - EVER!

I have been struggling for a while finding a recipe for a decent carrot cake.  Carrot cakes are tricky beasts and most recipes are too sweet.  But do try this one:

175 g Sugar
3 Eggs
175 ml Sunflower Oil
175 g Coarsely Grated Carrot
1 small tin of Pineapple
100 g Chopped Walnuts
280 g Plain Flour
1/2 tsp Salt
2 tsp Baking Powder

Frosting:
100 g Cream Cheese
80 g of Icing Sugar
1/2 tsp Vanilla Extract
25 g Chopped Walnuts

Making it couldn't be easier.  Cut the pineapple into chunks, chop the walnuts a bit and throw everything in a bowl and give it a good run with an electric mixer.  Fill into a greased tin and bake for 1 hour at 180 degrees.  After baking let it cool for a while.  Give the cheese/icing sugar a run in a blender and spread over the cake.  That's it - best one ever.
